This Moment - Preserving Lemons in Salt

    The lemons will cure in our fridge for about 3 weeks. When we're ready to use them, we'll take one out, rinse it off and chop it up in place of lemon zest, in soups, stews, Middle Eastern dishes, cous-cous, etc. Very lemony flavor. It'll store up to 6 months in the fridge.
